Gallagher's Steakhouse
All of the beef at Gallagher's, in New York-New York, is aged for 21 days. You can see it in the display windows. The steakhouse is aged, too, retaining the charm of the original, which opened in 1927.

Located at Caesars Palace, Sushi Roki is not sushi for beginners. Looking for extreme? Check out the High Roll-er: lobster, black truffles and Kobe beef, topped with a 24-carat gold leaf. Happy hour is held daily, 4-6 p.m.

For 30 years, The Tillerman has brought class to Vegas. The decor has stayed trendy, with wood tones and a skylight that retracts. But seafood is the star. Try the seafood platter or the yellowfin tuna. Open daily, 5-10 p.m.

See all of Vegas atop the Stratosphere at this 360-degree rotating restaurant. The cuisine is gourmet American, and there's a private area for large parties. But don't show up casually dressed - there's a dress code.
